Bonus Recipes for Sigona’s Summertime Peach White Balsamic

Fresh Chevre Drizzled with a Peach White Balsamic Reduction

This application is easy, elegant and delicious. Be sure to pair it with a quality goat cheese, such as Laura Chenel Chevre. The peach balsamic reduction presents caramelized fruit notes that compliment the creamy, slightly salty, tangy goat cheese perfectly. Once you’ve enjoyed this, you’ll wonder why you haven’t done it before.

What you’ll need:

  • 1 cup Sigona’s Summertime Peach White Balsamic
  • 4 oz. fresh chevre

Directions: In a 2 quart sauce pan over very low heat, gently simmer the balsamic and reduce by half, approximately a 1/2 cup. The condiment should never be allowed to boil or the natural sugar will burn and become bitter. The pot should be watched carefully. The process can take as long as 20-30 minutes but the results will be worth the effort. The finished reduction should be thick and light amber in color and will smell slightly of caramel and complex fruit.

Allow to cook completely and then transfer to a jar. Once allowed to sit, and cool the flavor will become more complex. It can be kept on the counter or in the refrigerator, however refrigeration is not necessary.

Use to glaze pork, poultry, ribs, fresh fruit or paired with cheeses.

Peach White Balsamic Bellini

The season for locally grown summer stone fruit is on its way out, so let’s with it bon voyage until next summer in style. Grab a few peaches, a bottle of prosecco and a little of the white peach balsamic and make yourself a bellini. Enjoy during brunch with friends.

  • 1 Cup Sigona’s Summertime Peach White Balsamic
  • 1 pound peeled, sliced ripe peaches or 1 16-ounce bag frozen peaches, defrosted
  • 1 bottle chilled Prosecco or other sparkling white wine
  • A spring of mint or fresh raspberries for garnish

Directions: Mix, chill and serve. Serves 4-6.

Grilled Prawns Brushed with Sigona’s White Peach Balsamic

The sweet, tangy flavor of the white balsamic is a perfect match for grilled prawns. Great on a warm night. Serves 2.

What you’ll need:

  • 10+ prawns
  • Sigona’s Summertime Peach White Balsamic
  • Sigona’s Fresh Press EVOO
  • Salt & pepper (to taste)
  • Red pepper flakes (optional)
  • 2 wooden skewers

Directions:  If using frozen prawns, thaw accord­ing to package directions. If necessary, peel and devein. Soak 2 wooden skewers in water for 10 minutes before skewering the prawns (this is so wood doesn’t catch fire on the grill). Slide 5 prawns onto each skewer. Season with a little olive oil, red pepper flakes (optional), salt and pepper to taste. Grill for just a couple of minutes, brushing with white peach balsamic. Serve warm or chilled.
